Saturday's Potluck

Thanks to everyone who came to Dawn's place on Saturday! All the food was awesome and the company wasn't so bad either. ;) A couple of people asked me for the recipe for my Butternut Squash phyllo triangles. I'll have to take pictures of the rolling process, but the filling was a simple mix of:

1 medium butternut squash
1/4 cup of thompson raisins
1/4 cup of rice syrup
1 tsp. cinnamon
1 tsp. vanilla extract
1 pinch of dried orange peel
1 pinch of salt

I roasted the butternut squash - cut into large pieces, skin on and after about an hour at 375, they were soft enough to just pull the skin off and mash. Mashed in with all the other ingredients and let cooled before assembling the phyllo triangles. Let me know if you have any questions or want to see how to make phyllo triangles!

NE Community Potluck

June's Community Potluck is being hosted by Amanda and John McGibbon. It will be Saturday, June, 30. Amanda and John have welcomed us to their home for a day of friends and good food! Bring a dish to share, with ingredients clearly labled, and a serving utensil. This month's theme is Americana, so if you'd like to participate in the theme, bring anything that says "Summer in Texas" to you. November Natural Epicurean Community Potluck

November's Community Potluck is being hosted by Brooke Northcutt and Betty Edmond at a ranch in Fisher, Texas. It will be Saturday, November 11. Betty welcomed us all out to her ranch for a fun filled day of friends and good food! You are welcome to come any time of the day for hiking and outdoor activities. Friends and family are welcome. September Potluck


The September potluck was held on Sunday the 24th in northeast Austin. Not only did we celebrate the fall, good food, good company and being alive to enjoy all these things, we also celebrated one of our students who will be venturing off to be a sous chef at a new restaurant in California. Good luck, Rachel!

The photos are of the handrolls I made for the potluck. I used a 2:1 ratio of short grain brown rice to sweet brown rice, which I soaked, then pressure cooked. The filling is homemade tempeh that was simmered in shoyu and water, then panfried, along with fresh cucumber, avocado, blanched carrots, pickled shiso leaf, and green onions. I garnished with edible marigolds, chive flowers, and toasted black sesame seeds. I served with a dipping sauce(not pictured), which I made by diluting shoyu with water and adding ginger juice and toasted sesame oil.
